This question came to me out of the blue. I had no idea what promted the question but if you have read any of my books, which I suspect that you have if you are reading this, then you will know that it is within my sphere of knowledge.
My Response .
There are many books that cover Norse and Icelandic mythology. Great collections abound, but few encompass all that you have asked for. Most settle on one aspect or another, one people or another. I could not include “Vikings” as going “a 'Viking” was simply a raiding party, and applied to all the Scandinavian peoples when they did so, be they Danes, Jutes, Getas or Norse. I would like to suggest a few wonderful books to read. “Njals Saga”, by Magnus Magnusson. The “Orkneyinga Saga”, “The trials of Seamund the white” Seamund Sigffusson. “Norse mythology” by Neil Gaiman (if I am even allowed to say his name here as he seems to have been cancelled) but a great work none the less. There are loads. Many to recommend. Norse and Icelandic fates were ever intertwined. Have fun. You have loads of great stuff to read. If you run out message me and I will recommend many more.
The sagas are a treasure trove of knowledge.
